Simply Tuscan – Pino Luongo

For those of you who keep asking for the Five Bean Salad recipe my husband Tim made for the Sarah Dunant book signing at the shop, here it is! The recipe is from the cookbook SIMPLY TUSCAN by Pino Luongo. I do have a tip though, we make this dish often in my home and canned beans work fine if you are in a pinch for time. Just rinse them well! The addition of scallions in the salad and that luscious Vinaigrette of red wine vinegar, olive oil and grated horseradish is really what gives the dish such great flavor.
